Our food comes from nature, from a network of mostly local farmers, artisans and producers, who cultivate, work and produce the ingredients with an ethical approach and good practices.
We cook with a minimum number of ingredients and processes, with respect, imagination and humility.
We strive to support and respect the use of vegetarian, organic and local ingredients.
Mouna, silence in Sanskrit, offers an “escape” from the modern diet, a product of the monoculture of industrial agriculture, preparing seasonal food that nourishes the body and spirit.
Food is medicine and a source of nutrition.
Food is not just a commercial product, it is a source of life and a sacred gift from the Earth.
